Chocolate Ice cream or Chocolate Mousse
(Gluten free, Dairy free, Sugar free)
WOW! Dairy free, sugar free, gluten free ice cream!
Really? Yes! I actually have two recipes for chocolate ice-cream that I love!
Here is the first one!
Dates 300g (use more or less to taste)
A cup of cocoa
Two 400g cans of coconut cream
If you have an amazing blender then you just blend all ingredients until smooth.
If you have an ok blender then let all ingredients soak for a few hours before blending until smooth.
If you have a blender that is terrible at blending dates, put all ingredients in a saucepan and bring to the boil. Turn off the heat and let cool, then blend until smooth while still warm.
Pour into a serving container.
Plastic ice cream tubs are perfect for freezing (of course).
Freeze(for ice-cream) or refrigerate(for mousse) for about 4 hours, makes 12 servings or about one litre.
Serve and enjoy (without any guilt!).
For peppermint flavours, add a teaspoon or two of peppermint essence when blending. YUM!
